Zucchini Bread - cooking recipe

Ingredients
    2 c. sugar
    3 eggs
    1 c. oil
    2 to 3 c. shredded zucchini
    3 tsp. vanilla
    3 c. flour
    1 1/4 tsp. salt
    1 tsp. baking soda
    1 tsp. baking powder
    1 tsp. cinnamon
    1 c. chopped nuts (optional)
Preparation
    Mix dry ingredients together and set aside.
    Mix moist ingredients together.
    Wash zucchini, slice lengthwise.
    Scoop out seeds; leave skin on to shred.
    Gradually add dry ingredients to first batter.
    Bake at 325\u00b0 approximately 1 hour.
    Makes 2 large or 3 small loaves.
