Country Chicken And Potato Bake - cooking recipe

Ingredients
    2 lb. red salad potatoes
    1 medium onion
    2 (3 lb.) chickens, cut up
    2 tsp. salt
    2 tsp. dried rosemary leaves, crushed
    1/2 tsp. coarsely ground pepper
Preparation
    Preheat oven to 425\u00b0.
    Cut unpeeled potatoes into chunks. Chop onion.
    In large roasting pan, toss potatoes and onion with chicken, salt, rosemary and pepper.
    Arrange the chicken pieces skin side up; bake, uncovered, 1 hour or until potatoes are tender and browned.
    Add a few pats of margarine on top of chicken before baking if you like.
    Baste the chicken and potatoes occasionally. Serves 8.
