Carrot Muffins - cooking recipe

Ingredients
    2 c. flour
    1 1/4 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. grated carrots
    1/2 c. raisins
    1/2 c. chopped nuts
    1/2 c. shredded coconut
    1 apple, peeled, cored and grated
    3 eggs
    1 c. vegetable oil
    2 tsp. vanilla
Preparation
    Preheat oven to 350\u00b0.
    In large bowl, sift together the flour, sugar, baking soda, cinnamon and salt.
    Stir in the grated carrots, raisins, nuts, coconut and apple.
    Beat together eggs, oil and vanilla.
    Stir into flour mixture just until moistened. Spoon batter into well-greased muffin tins.
    Bake 20 minutes. Paper liners work well and will make 24 muffins.
