Vegetable Curry - cooking recipe

Ingredients
    4 Tbsp. butter
    1 large onion, chopped
    2 cloves garlic, minced
    3 tsp. each: ground coriander and cumin
    1 tsp. ground ginger
    1/4 tsp. chili powder
    1 (16 oz.) can tomatoes
    1 tsp. salt
    2 1/2 c. water
    2 c. sliced carrots
    2 c. diced potatoes
    1 c. frozen peas (green)
    black pepper
Preparation
    Melt butter.
    Add onion.
    Saute 7 to 8 minutes.
    Add garlic and spices.
    Saute 2 to 3 minutes.
    Add tomatoes, salt, pepper and water.
    Simmer 5 to 10 minutes.
    Add potatoes and carrots.
    Simmer 15 to 25 minutes (until vegetables almost tender).
    Add peas. Simmer 5 minutes.
    Serve over rice.
