1 lb. zucchini, sliced
2 onions, sliced
15 oz. canned garbanzo beans
1 lb. diced canned tomatoes
2 Tbsp. margarine
1 1/2 c. white wine
2 tsp. salt (optional)
1/4 tsp. pepper
2 tsp. minced garlic cloves
1 tsp. dried basil
1 bay leaf
1 c. reduced fat Monterey Jack cheese, grated
1 c. Romano cheese or Parmesan, grated
Preparation

Combine all ingredients, except cheese, in a 3-quart baking dish. Cover and bake at 400\u00b0 for one hour, stirring halfway through. Stir in cheese. Bake an additional 10 minutes. Nutrition (per serving):
