Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dry pinto beans
    2 chopped onions
    2 stalks chopped celery
    1 green pepper, chopped
    1 clove garlic, crushed
    1 lb. smoked sausage or turkey sausage, cut in pieces
    2 c. cooked rice
Preparation
    Sort, wash and soak beans overnight in water.
    Next day, drain, rinse and add the onion, chopped celery, green pepper and garlic.
    Put in pan and cover with water.
    Bring to a boil, reduce heat and simmer for 1 hour.
    Add the sausage and continue cooking for 1 1/2 hours or until beans are tender.
    If necessary, add water (hot) to prevent beans from sticking.
    Stir in salt, pepper and Tabasco as mixture simmers.
    Add rice in the last 30 minutes. Yields 10 to 12 servings.
