Mustard Glazed Cucumbers - cooking recipe

Ingredients

4 medium cucumbers
1 c. chopped shallots
8 Tbsp. Dijon mustard
6 Tbsp. (1/4 stick) unsalted butter
2 Tbsp. minced fresh tarragon or 2 tsp. dried
1 c. dry wine
salt and pepper to taste
