Eggplant Parmesan - cooking recipe
Ingredients

1 medium eggplant, peeled and sliced
1 c. stewed tomatoes
1 c. bread crumbs
salt and pepper to taste
oregano to taste
1 c. tomato sauce
3/4 c. Cheddar cheese, grated
3 Tbsp. Parmesan cheese
Preparation

Simmer eggplant in pan of boiling salted water for 10 minutes. Drain.
