Mocha Nut Muffins(This Is A Low Cholesterol Recipe) - cooking recipe

Ingredients
    3 egg whites
    3/4 c. canola oil
    1 c. buttermilk
    1/2 c. regular old coffee
    1/2 Tbsp. vanilla
    1/2 c. unsweetened cocoa
    1 Tbsp. coffee grounds
    1 1/2 c. white flour
    1 1/4 c. wheat flour
    1 c. brown sugar
    1/2 c. maple syrup
    1/2 Tbsp. baking soda
    pinch of salt
    1 c. chocolate chips
    1/2 c. roasted walnuts or pecans
Preparation
    Blend all of the ingredients with an electric mixer on medium. Bake in muffin tins at 350\u00b0 for 20 minutes.
    Batter may be made ahead and stored, refrigerated, for several days.
