Lemon-Blueberry Oat Muffins - cooking recipe
Ingredients

1 c. quick cooking oats
1 c. all-purpose flour
1/2 c. sugar
3 tsp. baking powder
1/4 tsp. salt
1 c. fresh or frozen blueberries
1 egg white
1 egg
1 c. skim milk
2 Tbsp. butter or margarine, melted
1 tsp. lemon peel, grated
1 tsp. vanilla extract
Preparation

In a bowl, combine first 5 ingredients.
In another bowl, combine the egg white, egg, milk, butter, lemon peel, and vanilla. Mix well.
Add to dry ingredients just until moistened.
Fold in berries.
Coat muffin cups with nonstick cooking spray or use paper liners.
Fill 2/3 full with batter.
