Chicken And Vegetable Rice - cooking recipe

Ingredients
    1/2 chicken, cut up
    3 c. water
    1 1/2 tsp. salt
    1 1/2 c. uncooked rice
    1/4 lemon
    3 Tbsp. pan drippings
    2 tsp. parsley flakes or celery leaves (if available)
    1/2 c. diced celery
Preparation
    Cook chicken in water until it falls off bones.
    Remove the bones.
    Add salt, rice, lemon and pan drippings to chicken and broth.
    Bring to boil; stir well and cover.
    Reduce heat and simmer until rice is tender and liquid absorbed.
    Remove from heat; add parsley and celery.
    Toss lightly with fork.
    Makes 9 servings.
    You may also cook the rice and other ingredients in water and substitute tuna.
