Basic Buttermilk Bran Muffins - cooking recipe

1 3/4 c. whole wheat flour
1 3/4 c. bran flakes
1/2 tsp. salt
1 1/2 tsp. baking soda
2 c. buttermilk
2 egg whites
1/2 c. unsulfured molasses
3 Tbsp. melted butter
1 large diced apple
1/2 c. nuts with 1/2 c. chopped dates or 1/2 c. raisins or 1/2 c. mashed banana or 2 Tbsp. grated orange rind (your choice)
Preparation

Combine the flour, bran, salt and baking soda in a large bowl. Beat together the buttermilk, egg whites, molasses and butter. Add liquid mixture to the dry ingredients.
Stir together only enough to moisten.
Fold in apple and choice of other ingredients (no more than total of 2 cups).
Fill 24 greased muffin tins. Bake about 25 minutes in a 350\u00b0 oven.
