Mother'S Rhubarb Pie - cooking recipe

Ingredients
    3 c. diced rhubarb, put in pie shell
    1 c. sugar
    1 Tbsp. flour
    1 egg, beaten
    3/4 tsp. grated lemon rind
    1 Tbsp. lemon juice
    1/2 c. water
Preparation
    Combine sugar and flour; stir in egg, lemon rind and juice and water.
    Cook over boiling water until slightly thickened.
    Pour over rhubarb in pie shell.
    Top with a lattice crust.
    Bake at 425\u00b0 for 40 to 50 minutes.
    Makes a 2 crust 9-inch pie.
