Mexican Meat Loaf - cooking recipe

Ingredients
    1 1/2 c. finely chopped mushrooms
    1 medium zucchini, sliced
    1 medium onion, finely chopped
    3 Tbsp. red wine or water
    1/2 c. catsup
    1/2 c. milk
    1 tsp. prepared mustard
    1 egg, beaten
    1/2 c. seasoned, fine, dry bread crumbs
    1/4 tsp. salt
    dash of pepper
    2 tsp. chili powder
    1/2 tsp. cumin
    1/4 c. chopped pimentos
    1/3 c. chopped chilies
    1 (15 oz.) can whole tomatoes, drained
    1 lb. ground beef
    4 oz. grated Cheddar cheese
    bell pepper and pimento for garnish
Preparation
    In a medium saucepan, combine mushrooms, zucchini, onion, wine or water and 1/4 cup of water.
    Cover and let vegetables steam over medium heat until tender.
    Drain off liquid and add catsup and mustard; set aside.
