Zucchini-Lemon Muffins - cooking recipe

Ingredients
    1 c. flour
    1/2 c. whole wheat flour
    1/3 c. sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    1/2 tsp. baking soda
    1/2 tsp. grated lemon peel
    1/2 tsp. cinnamon
    1 c. zucchini (unpeeled), finely shredded
    1/2 c. chopped walnuts
    1/3 c. oil
    1/2 c. skim milk
    2 eggs
Preparation
    Preheat oven to 350\u00b0.
    Coat muffin tin with nonstick spray. Combine dry ingredients.
    Stir in lemon peel, zucchini and walnuts.
    Mix oil, milk and eggs.
    Add to dry ingredients; mix only until moistened.
    Bake for 25 to 30 minutes.
    Let stand a few minutes; remove from tins.
    Makes 12 large muffins.
