Sweet Potato Casserole - cooking recipe
Ingredients

3 to 4 C. sweet potatoes (cooked, peeled and mashed)
1 to 1 1/2 C. sugar
1/4 C. margarine
1 Tbsp. vanilla
2 eggs (slightly beaten)
1/2 tsp. salt
1/2 tsp. ground cinnamon
Small can crushed pineapple (drained)
1/2 C. margarine (melted)
3 Tbsp. flour
1/2 C. chopped nuts (pecans or walnuts)
3/4 C. brown sugar
Preparation

Mix first 4 ingredients. Combine eggs, salt and cinnamon. Fold in pineapple. Add to potato mixture. Pour into a greased 9x13 baking dish. Combine rest of ingredients and sprinkle over top. Bake 30 minutes at 350 degrees or until lightly brown and bubbly.
