Enchilada Casserole - cooking recipe

Ingredients
    1 lb. ground beef
    1 large onion, chopped
    1 Tbsp. chili powder
    1 can diced tomatoes
    8 corn tortillas
    1/4 c. oil
    1 can enchilada sauce
    1/2 c. sliced olives
    2 c. shredded Monterey Jack cheese
    1/2 c. shredded Cheddar cheese
Preparation
    Brown ground beef and onion.
    Add chili powder and diced tomatoes.
    Simmer.
    Fry tortillas, one at a time, in another skillet with oil.
    Spoon 1/2 cup meat mixture on each tortilla. Roll tightly and place in casserole dish.
    Pour enchilada sauce over rolled tortillas.
    Bake at 350\u00b0 for 20 minutes.
    Top with cheese and sliced olives.
    Bake until melted.
    Serves 6 to 8.
