Tomato Salsa - cooking recipe

Ingredients
    1 large lime
    2 lb. ripe tomatoes (about 4 large), diced
    1/2 small red onion, finely diced
    1 small jalapeno chile, seeded and finely chopped
    2 Tbsp. chopped fresh cilantro
    3/4 tsp. salt
    1/4 tsp. black pepper
Preparation
    From lime, grate 1/2 tsp. peel and squeeze 2 tablespoons juice.
    In medium bowl, combine lime peel and juice, tomatoes, onion, chile, cilantro, salt, and pepper; stir gently.
    Cover and refrigerate at least 1 hour to blend flavors.
    May be refrigerated up to 2 days. Makes about 3 cups.
