Scallops Italienne - cooking recipe

Ingredients
    3 Tbsp. butter
    1 Tbsp. shallots, minced
    2 tsp. garlic, minced
    1 c. mushrooms, chopped
    1 Tbsp. parsley, minced
    1/4 tsp. oregano or basil
    3/4 c. white wine
    2 tomatoes, peeled, cored and seeded
    salt and pepper
    1/4 c. Italian bread crumbs
    1/2 c. mixed Romano and Parmesan
    1 lb. sea scallops
Preparation
    Saute shallots and garlic in hot butter until soft.
    Add mushrooms, parsley and basil.
    Cook for 2 minutes.
    Add wine and cook briskly until reduced by half.
    Add tomatoes and mix well. Salt and pepper to taste.
    Add scallops and stir.
    Heat thoroughly.
    Sprinkle with bread crumbs and cheese.
    Broil 3 inches from heat until brown and bubbly.
    Serve immediately.
