Lanier'S Lone Star Caviar - cooking recipe

Ingredients
    1 can black-eyed peas, drained
    2 c. Italian salad dressing
    2 c. diced green peppers
    1 1/2 c. diced onion
    1 c. chopped jalapeno peppers
    1 (2 oz.) jar drained diced pimento
    1 Tbsp. chopped garlic
    salt to taste
    hot pepper salt to taste
    1/4 to 1/2 c. calantro (for extra zest)
Preparation
    Drain black-eyed peas well.
    Transfer to a large bowl.
    Blend in dressing and remaining ingredients and mix well.
    Makes about 7 1/2 cups, gets better with time.
