Apple Oat Bran Muffins - cooking recipe
Ingredients

1 1/4 c. whole wheat flour
1 c. oat bran
1/3 c. packed brown sugar
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
1 c. buttermilk
2 egg whites
2 Tbsp. cooking oil
3/4 c. peeled, shredded apple
Preparation

In medium bowl stir together first 8 ingredients.
In a small bowl combine milk, egg whites and oil.
Add to dry ingredients, stir just until moist.
Stir in apple.
Spray muffin cups with nonstick spray coating.
Spoon about 1/4 cup batter into each muffin cup.
Bake at 375\u00b0 for 18 to 20 minutes or until inserted toothpick comes out clean.
Makes 12 muffins.
May store batter, tightly covered, in refrigerator for up to 5 days.
