Meatless Chili - cooking recipe
Ingredients

2 Tbsp. oil
1 large onion, chopped in 1/2-inch pieces
1 qt. tomatoes
2/3 c. picante sauce (mild)
1 1/2 tsp. chili powder
1 1/2 tsp. cumin
3/4 tsp. salt
1 large green or red pepper, chopped
1 large zucchini, chunked
1 c. frozen whole kernel corn
1 c. pinto beans
Preparation

Heat oil.
Add chopped onions.
Saute 2 to 3 minutes.
Add tomatoes, picante sauce, chili powder, cumin and salt.
Cover. Cook on simmer 10 minutes.
Add beans, pepper, zucchini and corn. Cover and simmer 15 to 20 minutes or until zucchini is tender.
