Baked Squash Surprise(Serves 8 To 10) - cooking recipe

Ingredients
    1 1/2 lb. fresh squash or 2 (16 oz.) cans squash
    salt and pepper to taste
    1 small chopped pimento
    1 medium onion, chopped fine
    1 c. sour cream
    1 c. cream of chicken soup
    4 small grated carrots
    1 pkg. cornbread or herb stuffing
    3/4 c. oleo, melted
Preparation
    Cook squash in small amount of water until tender.
    Drain and mash.
    Season to taste.
    Stir in remaining ingredients.
    Mix stuffing and oleo.
    Reserve half stuffing.
    Put balance of stuffing in squash mixture.
    Line large casserole with reserved stuffing.
    Pour in squash mixture.
    Add balance of stuffing on top.
    Bake 30 minutes at 350\u00b0.
    May prepare the day before.
    Bake when needed.
    Freeze well.
