Ingredients

6 Tbsp. cornstarch
1 1/2 c. sugar
6 egg yolks
4 c. milk
2 tsp. vanilla
2 c. coconut
3 Tbsp. margarine
Preparation

Mix all ingredients except for the coconut.
Cook in the top of a double boiler until thick (at least 20 minutes), then add coconut and let cook a little longer. Pour in two 9-inch prebaked pie shells or graham cracker shells.
Beat egg white and 2/3 cup sugar until stiff and spread on pies.
Sprinkle coconut on top and brown lightly.
