Peanut-Date Chipperoos - cooking recipe

Ingredients
    1 1/2 c. peanut butter
    1 (8 oz.) pkg. pitted dates, chopped
    3/4 c. confectioners sugar
    1/2 c. flaked coconut
    1 tsp. lemon juice
    1/2 tsp. grated lemon peel
    3/4 c. finely crushed potato chips
Preparation
    In large bowl, stir all ingredients, except potato chips, until well mixed with hands.
    Shape mixture into 1-inch balls in crushed potato chips.
    Keep refrigerated.
    Makes about 36 pieces or 1 1/2 pounds.
