Make-Ahead Mashed Potatoes - cooking recipe

Ingredients
    5 lb. potatoes, peeled and quartered (about 15 medium)
    6 oz. Neufchatel cheese
    1 c. light sour cream
    2 tsp. onion powder
    1 tsp. salt
    1/2 tsp. freshly ground black pepper
    2 egg whites
    1 Tbsp. corn oil margarine
Preparation
    Cook potatoes.
    Mash until there are no lumps.
    Add Neufchatel cheese, sour cream, onion powder, salt, pepper and egg whites; blend well.
    Place in 9 x 13-inch casserole that has been sprayed with non-stick vegetable spray.
    Dot with margarine.
    If preparing ahead, allow to cool, cover and refrigerate for several days, if desired.
    To serve, bake in preheated 350\u00b0 oven for 40 minutes. Makes 12 one cup servings.
