Sweet Potato Surprise Cake - cooking recipe

Ingredients
    1 1/2 c. oil
    2 c. sugar
    7 eggs, separated
    4 Tbsp. hot water
    2 1/2 c. plain flour
    3 tsp. baking powder
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 1/2 c. grated raw sweet potatoes
    1 c. chopped pecans
    1 tsp. vanilla
Preparation
    Sift flour, baking powder, cinnamon and nutmeg.
    Combine oil and sugar, beat until smooth.
    Add 4 egg yolks and beat well.
    Add hot water, then dry ingredients, which have been sifted together. Stir in potatoes, pecans and vanilla; beat well.
    Beat 7 egg whites until stiff and fold in mixture.
    Bake in 3 greased and floured layer pans at 350\u00b0 for 30 minutes.
