1 c. butter or margarine, softened
3/4 c. sugar
3/4 c. packed dark brown sugar
3/4 tsp. vanilla
1/4 tsp. mint extract
2 eggs
2 1/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 c. chocolate mint chips
1 c. chopped nuts (optional)
Preparation

Preheat oven to 375\u00b0.
Cream the butter, sugar, brown sugar, mint and vanilla.
Beat in eggs.
Combine baking soda, flour and salt.
Gradually beat the dry ingredients into the creamed mixture. Stir in chips (and nuts, if using).
Drop by rounded teaspoonfuls onto ungreased cookie sheet.
Bake 8 to 10 minutes or until lightly browned.
Cool slightly and remove from the cookie sheet.
Cool completely.
Makes about 6 dozen cookies.
