Ingredients

3 medium potatoes, cut into 1/2-inch slices
1 pkg. boneless chicken thighs (about 1 1/2 lb.)
salt and pepper
3 carrots, scrubbed and cut into chunks
1 lb. green beans, cut up
6 medium yellow onions, quartered
6 Tbsp. dry white wine or water
1/2 tsp. dried thyme leaves
2 bay leaves, crumbled
Preparation

Preheat oven to 350\u00b0.
Cut 6 (16-inch) pieces of foil.
In center of each, arrange some of the potatoes and 1 chicken thigh. Season with salt and pepper.
Evenly divide carrots, green beans and onions; add to potatoes and chicken.
Sprinkle with wine, thyme and bay leaves.
Bring opposite sides of foil together and fold over twice.
Tightly fold up ends to seal.
Place packets on a large rimmed baking sheet and bake 50 minutes or until chicken and vegetables are tender.
Makes 6 servings.
