Eggplant Meatless Balls - cooking recipe

Ingredients
    1 eggplant, diced
    1/2 c. bread crumbs
    1 or 2 eggs (1 for medium eggplant; 2 for large eggplant)
    2 Tbsp. grated Italian cheese
    2 Tbsp. parsley
    garlic and salt to taste
Preparation
    Cook eggplant for 10 minutes.
    Strain and squeeze.
    Mix rest of ingredients together and form into small balls.
    Fry in oil or bake in a 350\u00b0 oven. Good luck!
