Holiday Potato Dish - cooking recipe

Ingredients
    4 lb. unpared potatoes, cooked and drained
    1 c. chopped onion
    1/4 c. butter
    1 (10 oz.) can cream of celery soup
    1 pt. sour cream
    1 1/2 c. shredded Cheddar cheese
    1/2 c. crushed cornflakes
    3 Tbsp. melted butter
    pimiento strips
    parsley
Preparation
    Remove skins from potatoes; shred into bowl.
    Saute onion in 1/4 cup melted butter until tender.
    Remove from heat.
    Stir in soup and sour cream.
    Pour over potatoes and cheese; mix well. Turn in greased 13 x 9 x 2-inch baking dish.
    Sprinkle with cornflakes and drizzle with 3 tablespoons butter.
    Bake in 350\u00b0 oven for 1 hour.
    Garnish with pimiento and parsley.
