Ingredients

2 Cornish hens
3 Tbsp. olive or rosemary oil
2 Tbsp. Dijon mustard
1 Tbsp. minced rosemary
1/2 Tbsp. minced garlic
2 Tbsp. lemon juice
sea salt to taste
black pepper to taste
4 rosemary sprigs
Preparation

Rub the hens with oil and place on a roasting rack.
Mix together the next 5 ingredients in a bowl, whisking until well blended.
Brush the sauce over the hens and place 2 sprigs of rosemary into each cavity.
