Microwave Harvard Beets - cooking recipe

Ingredients
    1 (16 oz.) can sliced beets, undrained
    1 Tbsp. cornstarch
    1 Tbsp. plus 1 tsp. sugar
    1/4 c. vinegar
Preparation
    Drain liquid from beets into measuring cup so it measures 2/3 cup (add water if necessary).
    Set aside.
    Mix together cornstarch and sugar in a deep 1 1/2-quart nonmetallic casserole.
    Gradually add beet liquid and vinegar to cornstarch mixture and stir until smooth.
    Heat covered on Full power, 1 1/2 minutes or until it comes to a boil.
    Stir.
    Boil liquid for an additional minute. Stir after 30 seconds.
    Add beets and heat uncovered on Full power for 3 minutes.
