Banana Muffins(Also Suitable For Diabetic Food Plans.) - cooking recipe
Ingredients

1 1/4 c. all-purpose flour
1 c. whole bran cereal
3 Tbsp. sugar
3 tsp. baking powder
1 egg
2 bananas (fully ripe), mashed (1 c.)
1/4 c. skim milk
1/4 c. oil
Preparation

In a medium bowl, stir together the flour, cereal, sugar and baking powder.
In a smaller bowl, beat egg slightly.
Beat in bananas, milk and oil.
Add all at once to flour mixture.
Stir just until dry ingredients are moistened, but lumpy. Spoon batter into 12 paper lined cups, filling them half full.
Bake at 400\u00b0 for about 20 minutes.
Yields 12.
