Black Bottom Cupcakes - cooking recipe

Ingredients
    1/2 lb. cream cheese
    1 egg, beaten
    1 Tbsp. sugar
    1/8 tsp. salt
    6 oz. chocolate bits
    3 c. sifted flour
    1/2 c. cocoa
    2 c. sugar
    1 Tbsp. baking soda
    1 tsp. salt
    2 c. water
    2 Tbsp. vinegar
    2/3 c. salad oil
    2 tsp. vanilla
Preparation
    Combine cream cheese, egg, sugar and salt; mix by hand.
    Stir in chocolate bits; set aside.
    Preheat oven to 350\u00b0.
    Sift flour, cocoa, sugar, soda and salt.
    Add water, oil, vinegar and vanilla, beating well.
    Mixture will appear unmixable at first.
    Keep beating.
    Use muffin tins and paper liners, filling 1/2 to 3/4 full with dark mixture (flour and cocoa).
    Drop one tablespoon of cheese mixture on top of each one.
    Bake about 20 minutes.
    These freeze well.
    Serves 24.
