Apricot Glazed Sweet Potatoes - cooking recipe

Ingredients
    3 lb. sweet potatoes
    1 c. brown sugar
    1 1/2 Tbsp. cornstarch
    1/4 tsp. salt
    1/8 tsp. cinnamon
    1 c. apricot nectar
    1/2 c. hot water
    2 Tbsp. butter
    1/2 c. chopped pecans
Preparation
    Cook sweet potatoes in boiling salt water 10 minutes.
    Cool, peel and slice 1/2-inch thick.
    Arrange in 2-quart casserole. Combine brown sugar, cornstarch, salt and cinnamon in saucepan. Add nectar and water.
    Cook over medium heat until thickened. Stir in butter and nuts.
    Pour over potatoes.
    Bake at 350\u00b0 for 25 minutes.
