Watermelon Rind Pickles(3 Days) - cooking recipe

Ingredients
    7 lb. watermelon rinds
    1/4 c. salt
    2 c. white vinegar
    7 1/2 c. sugar
    1/2 tsp. oil of cloves (available at drug store; cannot get from grocery store)
    1/2 tsp. oil of cinnamon (available at drug store; cannot get from grocery store)
Preparation
    Cut the rinds in cubes.
    Soak 2 hours in ice water with 1/4 cup of salt. Drain off water and add cold water to cover.
    Cook 10 minutes or until tender, not soft.
    Drain this water off and add the vinegar and spice.
    Pour over the rinds and let set overnight.
