Venison Ribs - cooking recipe

Ingredients
    venison ribs
    1 bottle liquid smoke
    black pepper to taste
    barbecue sauce
Preparation
    Boil ribs in water until tender (this removes the fat).
    Take ribs from water and let cool.
    Marinate in liquid smoke 1 to 2 hours.
    Take out of marinade and sprinkle with pepper to taste. Prepare charcoal smoker to manufacturer's instructions.
    When coals ash over, liberally add hickory chunks.
    Fill drip pan with water and put ribs on and cook 1 hour per pound.
    When finished, remove and let cool.
    Brush sauce on ribs and refrigerate overnight.
    Next day, take out and when at room temperature, put on barbecue grill. When sauce sets up, ribs are ready.
