Cucumber Vinaigrette Salad(Gurkensalat) - cooking recipe

Ingredients
    2 large cucumbers
    1 Tbsp. salt
    3 Tbsp. olive oil
    4 Tbsp. vinegar
    1/2 tsp. freshly ground pepper
    2 Tbsp. minced parsley
Preparation
    Wash cucumbers and peel; slice very thin.
    Place in glass or china bowl; sprinkle with salt.
    Let stand 1 hour or longer. Squeeze liquid out of cucumbers.
    Combine remaining ingredients; pour over cucumbers.
    Mix and serve.
    Serves 4.
