Broiled Eggplant - cooking recipe

Ingredients
    2 small eggplant or 1 large, cut into 4 lengthwise slices
    salt
    bread crumbs
    Parmesan cheese
    olive oil
    1 clove garlic
Preparation
    Make crisscross cuts in inside surface.
    Sprinkle with salt and pepper.
    Mix a crushed clove of garlic with about 1/4 cup olive oil; brush over eggplant.
    Sprinkle lightly with mixture of fine dry bread crumbs and grated Parmesan cheese.
    Drizzle with a little more oil.
    Place in greased broiler pan and broil, very, very slowly until golden on top and eggplant is tender.
    Takes 10 to 20 minutes depending on thickness of vegetable.
    No need to turn eggplant.
