Java Cream Tarts - cooking recipe

Ingredients
    6 Tbsp. flour
    2/3 c. sugar
    1/8 tsp. salt
    2 c. strong coffee
    1 c. evaporated milk
    2 eggs, beaten
    3/4 c. sugar
    1 1/4 c. milk
    1 egg white
Preparation
    Combine flour, sugar and salt in top of a double boiler.
    Add coffee and milk; mix well.
    Cook over low heat, stirring constantly, until thick.
    Pour slowly over beaten eggs.
    Mix well and return to double boiler and cook over boiling water for 3 minutes.
    Add vanilla and butter.
    Cool.
    Pour into tart shells and chill thoroughly.
    Makes 8 tarts.
