Easy Chile Rellanos - cooking recipe

Ingredients
    18 whole Ortega green chiles
    1 lb. Jack cheese, cut in 18 strips
    1/2 lb. grated Cheddar cheese
    1/2 tsp. salt
    Tabasco to taste
    5 large eggs
    1/4 c. flour
    1 1/4 c. milk
    dash of pepper and paprika
Preparation
    Remove seeds from chiles; rinse, drain and pat dry.
    Place a strip of Jack cheese on each chile and fold chile over cheese. Beat eggs and gradually add flour, beating until smooth.
    Add milk, pepper and Tabasco.
    Beat thoroughly.
    Arrange 1/2 of the stuffed chiles in a well-greased 7 x 13-inch pan.
    Sprinkle the chiles with 1/2 of the Cheddar cheese and sprinkle with paprika. Repeat layer.
    Pour the egg mixture over the top.
    Bake uncovered in 350\u00b0 oven for 45 minutes.
    Serves 6 to 8.
