Exotic Chicken Salad - cooking recipe
Ingredients

2 1/2 to 3 lb. cooked chicken, cut in chunks
1 (8 oz.) can sliced water chestnuts
1 lb. seedless grapes
2 c. celery, chopped
2 to 3 c. slivered almonds, toasted (save 1/2 c. for garnish)
2 to 3 c. mayonnaise
1 Tbsp. curry powder
1 Tbsp. soy sauce
2 Tbsp. lemon juice
lettuce
1 (20 oz.) can pineapple chunks
Preparation

Combine first 5 ingredients.
Combine mayonnaise, curry powder, soy sauce and lemon juice; toss with chicken and chill several
hours.
Spoon
onto
bed
of
lettuce
or
individual plates.
Sprinkle with pineapple and rest of almonds.
