Jicama (He'Ke Me) Salad - cooking recipe

Ingredients
    1 1/2 c. cherry tomatoes, halved
    1 c. jicama, peeled and cut into 1/2-inch cubes
    2 Tbsp. sliced green onions
    1/4 c. salad oil
    3 Tbsp. wine vinegar
    1/4 tsp. dried tarragon, crushed
    1/8 tsp. garlic powder
    lettuce cups
Preparation
    Combine tomatoes, jicama and onions. In small jar, combine balance of ingredients except lettuce. Cover and shake. Pour over vegetables; toss. Cover and refrigerate for several hours, spooning dressing over salad occasionally.
