Eggplant Casserole - cooking recipe
Ingredients

1 c. cooked mashed eggplant
2 eggs, well beaten
1 c. bread crumbs
1 c. grated cheese (American or Cheddar)
1 can cream of chicken soup
onions and bell pepper, chopped
Preparation

Mix all ingredients together and bake at 375\u00b0 for 1 hour. Garnish with extra cheese.
