Potato Salad For Large Crowd(30 People Or More) - cooking recipe

Ingredients
    5 lb. Irish potatoes, with jackets on
    6 boiled eggs, chopped
    2 large onions, chopped well
    several stalks celery, chopped fine
    1/2 jar chopped sweet pickles
    1/2 c. sweet pickle juice
    3 Tbsp. Deep South mayonnaise
    about 1 qt. mayonnaise
    2 large bell peppers, chopped
    1 large jar pimento, chopped
    1 Tbsp. mustard
    salt and pepper to taste
Preparation
    Cook potatoes; cool, peel and chop.
    Add eggs, bell peppers, onions, pimento, celery and pickles.
    Make sauce by mixing well the pickle juice, mustard and 3 tablespoons mayonnaise.
    Add about 1 quart mayonnaise, salt and pepper to the sauce.
    When potato mixture is cold, add sauce all at one time to mixture.
