Snow Peas Oriental - cooking recipe

Ingredients
    vegetable cooking spray
    1 tsp. light sesame oil
    1/2 lb. fresh snow peas pods, trimmed
    3/4 c. diagonally sliced carrots
    1/3 c. sliced water chestnuts
    1/2 c. canned no salt added chicken broth (undiluted)
    1 tsp. low sodium soy sauce
    1 tsp. cornstarch
Preparation
    Coat a nonstick skillet with cooking spray.
    Add oil and place over medium heat until hot.
    Add snow peas and carrots.
    Saute 2 minutes.
    Add water chestnuts and broth.
    Bring to a boil.
    Cover, reduce heat and simmer 5 minutes or until vegetables are crisp-tender.
    Combine soy sauce and cornstarch.
    Stir until cornstarch dissolves; add to vegetable mixture.
    Cook over medium heat.
    Stir constantly until thickens.
    Serve immediately.
    Makes 4 servings.
