Spanish Rice - cooking recipe

Ingredients
    3 Tbsp. salad oil
    1 clove garlic, minced
    1 med. onion
    1/4 c. chopped red or green pepper
    3 c. boiled rice
    1 tsp. salt
    2 1/2 c. canned tomatoes
Preparation
    Heat oil in a frying pan.
    Add onion, pepper, and garlic. Cook 2 to 3 minutes.
    Add tomatoes, salt and blend well.
    Stir in cooked rice.
    Cover pan and cook at low heat until tomato juices are absorbed (about 15 minutes).
    Serves 6.
