Santee River Pilaf - cooking recipe

Ingredients
    2 lb. bacon or butts meat
    2 large onions
    2 whole chickens (raw)
    2 lb. red smoked sausage, sliced
    3 lb. rice
    salt and pepper to taste and water
Preparation
    Put in a 12-quart pot the bacon cut in small pieces.
    Fry until done.
    Add onion and cook brown.
    Put water 3/4 full.
    Add chicken; boil 15 minutes.
    Add sausage, salt and pepper; boil 30 minutes.
    Add rice; cook until done.
    Stir after.
    Well feeds 12 to 25 people.
