Zucchini Cheese Omelet - cooking recipe

Ingredients
    3 small zucchini, cleaned and scrubbed
    1 medium onion
    1/2 c. or more bacon
    2 tsp. butter (optional)
    6 eggs
    1/4 c. grated cheese (we use white American, more cheese makes it better)
    salt and pepper to taste
Preparation
    Slice zucchini in thin slices.
    Set aside.
    Lightly brown onion in bacon grease after the bacon is done.
    Pour off some excess fat and add sliced zucchini and butter.
    Cover loosely and steam about 5 minutes.
    Stir several times.
    Beat eggs and season. Add grated cheese.
    Mix well and pour into skillet with other ingredients.
    Cook over medium heat; turn.
    Brown lightly on other side.
    Serve at once.
    Serves 4.
